Scylla's right next to me, we're looking at your work together - and to be honest, I think your scanner is ramping up the contrast on the raw image, before applying these adjustments. So the second option isn't really any less harsh, it's just lighter.
You may just want to use a phone camera instead (ideally lit by daylight), rather than using the scanner. Generally speaking even though people feel that scanners are preferable, well lit photos are often more accurate in capturing the nuance of a student's work.
