Not sure how much I can help as my feedback highlighted that I struggled with this too. However, after the feedback I realised that I would probably get a better result be assuming a light source and then darkening or lightening the textures accordingly. I tended also to choose textures that could work naturally with the shape of the dissection.
Aside from the you just have to imagine/visualise how the texture might look wrapped around the sausage from a gravity, lighting and texture perspective and then try and implement it. Sometimes it works,sometimes it definitely didn't.
Also remembering to break the edges with the texture helps rather than keeping it neatly within lines.
Very difficult exercise for me.
